Boom Berry

Good evening, Kitschies!  Have you missed me?  It's been INSANE at work the last two days and I haven't had any time to blog.  I barely have time to glance at everybody else's posts (sorry 'bout that - I'll get caught up eventually).  And by the time I got home last night...I was DONE.  I was in bed before 9 last night...and fast asleep by 10 (after reading for a bit).  Tonight I have a little more energy, but it probably won't last long.  So, while Mason's yelling for Daddy from the confines of his crib and Nate and the hubs are playing Lego Star Wars, I'm going to put this post together (read: before I fall asleep). 

The hubs brought home strawberries the other weekend and he told me it was my responsibility to do something with them.  I wanted Strawberry Shortcake, but I didn't want to use the pre-made cups from the grocery store, so I grabbed my Bisquick box and mixed away.

Classic Strawberry Shortcakes
1 quart (4 cups) strawberries, sliced
1/4 cup sugar
2 1/3 cups Bisquick mix
1/2 cup milk
3 Tbsp sugar
3 Tbsp butter, melted
1/2 cup whipping cream

Heat oven to 425*. In large bowl, mix strawberries and 1/4 cup sugar. Set aside.

In medium bowl, stir Bisquick mix, milk, 3 tablespoons sugar and the butter until soft dough forms. On ungreased cookie sheet, drop dough by 6 spoonfuls.

Bake 10 to 12 minutes or until golden brown. Meanwhile, in small bowl, beat whipping cream with electric mixer on high speed until soft peaks form.

Split warm shortcakes; fill and top with strawberries and whipped cream.

NOTES: Instead of making my own whipped cream, we just used Cool Whip. Besides, if I were to make my own, I would add some powdered sugar and vanilla. Anyway...I baked these on my silicone baking sheet and they came out perfect.

To me, they resembled baked cauliflower, but they didn't taste like cauliflower.  I made these again this last weekend but substituted brown sugar for white sugar - they weren't as good (sorry, Wendi).

So good.  So very, very good!  Both Nate and Mason devoured their helpings and the hubs and I went back and shared another one later that evening.  This is super easy and super yummy - definitely something I'll be making again and again!

It looks like things are a little more calm at the clinic tomorrow...at least that's what I'm hoping.  In other news, I'll be registering my baby for KINDERGARTEN in a month.  *sigh*  He's still so little...I can't believe he's already going to be in kindergarten.  Kinda makes me sad.  But I know he'll have a blast.  I can still be sad, though, right?

OMG!!! MEGAN!!! I am taking my broken ass over to your house!!! These look sooooo good.

I remember sending my little Bender to Kindergarten. That was during 9/11. I can't believe how long ago that was. You can be sad...it still makes me sad. Ben is three years from being grown... I am not sure how the heck that happened. Don't worry mama... they will always love you best!!!!

He's just growing up way too fast!
The strawberry shortcake pictures made my mouth water. I think I will have to make these this weekend after our trip to the Farmer's Market.
